Eggnog Recipe

Here's a little version of eggnog that should keep you coming back for more.

I use Southern Comfort, but whisky, cognac, brandy or baileys is just as good.  Adjust sugar according to you choice.

Serves 2-3


2 eggs

80g sugar

150ml single cream

1tsp vanilla extract

100 ml of Southern Comfort 




1) Seperate the eggs and beat the whites with 20g of sugar until stiff

2) Place the eggs yolks, cream, vanilla, 60g sugar, Southern Comfort and a good grind of nutmeg into a pan and whisk on a low heat until it thickens.  Take care not to rush this or overheat as the eggs with scramble if you do.

3) Cool the mixture then fold in almost all the egg whites.  Pour into a Martini glass, garnish with a spoonful of the remaining egg whites and a final grate of nutmeg.
